Advice on good bed? (organic, etc)

So after 14 years, my waterbed is finally toast. The mattress split on the seam tonight, and we had a few frantic hours draining it.

So now I'm on the market for a new bed. I'm thinking memory foam on top of an organic mattress. Any comments? Anyone to trust, anyone to avoid?
